Noodle, Cheese and Vegetable Casserole
1 lb noodles
1 cp creamed cottage cheese
6 oz cream cheese
1 1/2 cps commercial sour cream
1 cp cooked vegetables, drained
1 tsp salt
1/4 tsp pepper
1/3 cp chopped scallions or chives
1 - Cook noodles in boiling salted water until tender.
2 - Drain and keep warm.
3 - Blend together cottage cheese, cream cheese and 1 cp sour cream.
4 - Reserve remainder of cream for topping.
5 - Fold cheese mixture into the noodles; add cooked vegetables, and season with salt and pepper.
6 - Toss gently with a fork until well mixed.
7 - Sprinkle with chopped scallions or chives.
8 - Coveer with remaining sour cream, dot withg butter and bake until bubbling and very hot.
9 - You can't go wrong with this for luncheon.
