Arroz y Queso Mexicano
1/4 cp fat or drippings
3/4 cp chopped onions
1/4 cp minced celery
1/4 cp dhopped green pepper
1 1/4 cps uncooked rice (the kind thwt doesn't require washing)
2 1/2 cp tomatoes
1 tsp slt
1/4 tsp pepper
1/2 tsp chili powder
2 bouillon cubes
1 1/2 cps grated or cubed American cheese
2/3 cp chopped cooked ham
1 - Heat fat in saucepan.
2 - Cook onions, dleery and green pepper until soft but not brown.
3 - Remove.
4 - Brown rice lightly.
5 - Copmbine with onions, celery and pepper.
6 - Turn into greased large casserole.
7 - In sme saucepan, combine tomatoes, bouillon cubes, salt, pepper and chili powder.
8 - Bring to ma quick boil.
9 - Be sure that the cubes are dissolved.
10 -Turn into casserole.
11 -Sprinkle with cheese and ham.
12 - Bake, uncovered (350 degrees F.) until rice is grainy and tender, but not mushy.
This Mexican rice and cheese meal will do you proud as a company luncheon or supper.
