Casserole of Savory Spanish Rice
8 small sausages
1 clove garlic, mashed
3 tbsp olive oil
1 large sweet onion, chopped
1 green pepper, chopped
2 large tomatoes, chopped
1 cp uncooked rice
2 tbsp chopped parsley
1 cp beef stock or bouillon cube dissolved in hot water.
salt and pepper to taste
pinch of saffron
1 - Brown sausages and garlic in hot oil for 2 minutes.
2 - Add onion, green pepper and tomatoes and saute 3 more minutes.
3 - Add rice, parsley and asute until rice is golden brown.
4 - Pour in beef stock.
5 - Sprinkle with salt, pepper and saffron.
6 - Transfer to casserole and bake unbtil done.
7 - If you have any leftover cooked choopped giblets, they can be added to the casserole. Saute them with the sausages.
