Fillets of Striped Bass Bonne Femme
2 lbs bass fillets (sve bone)
1 clove garlic
2 slices onion
1 cp water
1/2 cp white wine
1 tsp[ chopped shallots or chives
1 tsp chopped parsley
sqalt and pepper
1 cp sliced mushrooms
3 egg yolks 3 tbsp butter
1 - Put fish bones in saucepan with peppercorns, gqarli, onion, water, and wine
2 - Bring to boil, then simmer for half an hour to make fish stock.
3 - Strain and reserve.
4 - Sprinkle a buttered medium casserole with shallots and parsley.
5 - Place fish in pan.
6 - Season with salt and pepper and top wiht sliced mushrooms.
7 - Pour in fish stock.
8 - Bake in moderate oven (350 degrees F.) until fish is done (about 10 minutes).
9 - Remove fish to a hot serving platter.
10 - Thicken sauce in casserole by ading egg yolks and butter.
11 - Serve very hot over fish
