1 lb fish fillets, fresh or frozen and thawed
3 tbsp butter
1/4 cp chopped onion
1/4 cp chopped green pepper
3 tbsp shredded pimentos
1 can condensed celery soup, undiluted
1 cp cooked or canned shrimp
1/4 cp sliced mushrooms
salt and pepper
2 cps seasoned mashed potatoes
1 - Cut fillets into 3/4 inch cubes
2 - Melt butter in saucepan
3 - Cook onion, peppers and pimentos until soft.
4 - Stir in soup, shrimp, fish, and half the mushrooms (save the other half for garnishing).
5 - Season with salt and pepper.
6 - Gently spoon mixture into greased medium casserole.
7 - Line sides with potatoes and brush with butter.
8 - Garnish center with remain=der of mushrooms.
9 - Bake until fish is tender.
10 - Do not overcook ... timing is your clue to moist well-flavored fish.
