Savory Halibut and Broccoli Casserole
4 halibut steaks, about 2 lbs
2 tbsp lemon juice
1/2 lb salt pork (about 8 thin slices
1/2 cp thinly sliced onions
2 lbs broccoli, cooked and drained (cut off tough stems before cooking)
1 bay leaf, crumpled
3 tbsp butter or margerine
3 tbsp flour
3/4 cp crushed cracker crumbs
1 tbsp paprika
1 - Brush halibut steaks with lemon juice.
2 - Mince all but 2 slices of salt pork and sprinkle into greased shallow casserole.
3 - Top with onion and broccoli.
4 - Add bits of bay leaf.
5 - Now place halibut steaks in casserole.
6 - Blend butter and flour, and spread over fish.
7 - Add crumbvs mixed with paprika.
8 - Lay thin slices of pork on top.
9 - Bake in moderate oven (375 degrees F.) until fish is done.
