Fluffy Salmon Soufle'es
1 1/2 cps flaked drained salmon
2 cps seasoned mashed potatoes
2 eggs, slightly beaten
1/2 tsp celery salt
dash of pepper
3 tbsp buttered bread crumbs
1 - Combine all ingredients except bread crumbs.
2 - Pat on lightly floured board
3 - Cut into squares.
4 - Roll in buttered crumbs.
5 - Place in greased shallow casserole and bake in 450 degree F. preheated oven and bake until very brown and hot.
6 - Do not bake souffle'es for more than 10 minutes. If baked too long they will dry.
7 - May be served with hllandaise sauce poure over each square.
