Baked Tuna with Brazil Nuts
4 tbsp butter
4 tbsp flour
3/4 tsp salt
dash of pepper
2 cps milk
1 (13 oz) can tuna fish, drained and flaked (save liquid)
1/2 Tsp Worcestershire Sauce
1/4 cp shredded pimentos
1 cp ground brazil nuts
6 shelled whole brazil nuts
1 - Make a sauce: Melt butter, stir in flour, salt and pepper.
2 - Gradually add milk, tuna liquid, and Worcestershire sauce.
3 - Cook slowly until smooth and thick.
4 - Add half the pimentos, ground Brazil nuts, tuna fish.
5 - Pour into a greased small casserole.
6 - Top with remaining pimentos and whole Brazil nuts arranged to make a pretty pattern.
7 - Put in oven to bake.
8 - A Lenten favorite.
(To shell Brazil nuts, put them into 400 degree F. oven for 20 minutes. Cook, crack and shell ... they come out whole.
Or boil in salted w3ater for 3 minutes)
