2 lbs boneless beef, cut into chunks
2 large green peppers, seeded and coarsely chopped
2 large Spanish onions, coarsley chopped
4 cps canned tomatoes
1 1/2 tsp salt
1/4 tsp pepper
1/2 tsp sugar
2/3 cp cooked pitted prunes
6 small pared potatoes
1 - Put beef into large casserole and smother with peppers and onions.
2 - Combine canned tomatoes, salt, pepper, and sugar.
3 - Pour over meat.
4 - Surround with prunes and potatoes.
5 - Cover and bake at 300 degrees F. until beef is tender.
6 - Don't be afraid to keep this casserole in the oven. Longer cooking improves it,
but if meat appears to be dry, add beef stock.
7 - Don't increase the heat--this casserole needs slow baking( 3 to 3 1/2 hours)
