Armenian Hamburger Casserole
1 cp crushed wheat (I have bought this at a store in a small town
so I hope it is generally available)
2 lbs chopped beefsteak, not too lean
1 medium onion
1 1/2 tsp salt
1/4 tsp pepper
3/4 cp butter
1/2 cp pine nuts (Armenian and Italian stores sell them)
1 - Soak wheat in cold water for 10 minutes.
2 - Drain and squeeze dry.
3 - Add to meat.
4 - Put through food chopper with onion, using fine blade.
5 - Season with salt and pepper.
6 - Brown in half the butter.
7 - Spread half the browned beef in a greased medium casserole.
8 - Sprinkle with pine nuts.
9 - Spread remainder of browned beef.
10 - Dot top with butter.
11 - Cut into squares with a sharp knife.
12 - Bake until very brown on top.
13 - Serve hot over steamed rice, right from the casserole.
14 - Try adding plump raisins to the rice.
