Cuban Beef and Pepper Casserole
3 tbsp fat or oil
2 sweet p[eppers, seed and cut into strips
1 lb ground beef
3/4 tsp salt
1/4 tsp cayenne pepper
2 cps corn kernels
4 medium tomatoes, sliced thick
1/4 cp buttered crumbs
1 - Heat fat, brown peppers and beef.
2 - Remove from heat.
3 - Stir in eggs, salt and pepper.
4 - In buttered medium casserole, arrange in layers, corn, meat and peppers, sliced tomatoes.
5 - Top with buttered crumbs.
6 - Bake uncovered in moderate oven (375 degrees F.) until piping hot but still juicey.
