Roast Beef and Sour Cream Casserole
2 cps leftover roast beef, chopped coarsely
2 cps cooked rice
1 tsp salt
dawsh of pepper
1 1/2 cps mushroom soup
1/2 cp thin cream
2 tbsp butter
1 cp commercial sour cream
1 - Set aside 1/4 cp rice for topping.
2 - Arrange a layer of roast beef and a layer of rice in a greased medium casserole.
3 - Sprinkle with salt and pepper
4 - Repeat roast beef and rice layers.
5 - Combine mushroom soup and thin cream and pour over meat.
6 - Sprinkle with remaining rice.
7 - Dot with butter.
8 - Bake in moderate oven (375 degrees F.) until slightly brown on top, about 15 minutes.
9 - Spoon sour cream into casserole, sprinkle with paprika and put back in oven until sour cream is heated through.
10 - Serve right from casserole--and be glad that you roasted a beef large enough for leftovers.
