1 lb beef or calf liver
1/2 small onion
1/2 green pepper
1 cp fine bread crumbs
3/4 tsp salt
1/4 tsp pepper
1/2 lb fresh or canned mushrooms
4 tbsp butter
4 tbsp flour
1 1/2 cps beef stock or consomme
1 No. 2 can new potatoes, drained 1/2 tsp[ Hungarian Paprika
1 - Pour boiling water over liver.
2 - Drain at once.
3 - Discard skin and membrane.
4 - Put liver twice through food chopper with onion and green pepper, usning fine blade.
5 - Combine ground mixture with bread crumbs, salt, and pepper.
6 - In hot butter, brown mushrooms, stirring to brown all over.
7 - Add more butter to pan, stir in flour, beef stock, or consomme.
8 - Bring to boil, then let wimmer for 5 minutes.
9 - Pour sauce over liver in casserole, put potatoes around as a border,
sprinkle with paprika and bake uncovered in 350 degree F. oven until liver is done and potatoes are browned
10 - Serve3 with cooked noodles.
