Swedish Veal and Orange Casserole
3 lbs veal cutlets, sliced thin
1/2 cp grated Parmesan cheese
1 tbsp salt
1 tsp pepper
1 tsp sugar
3 tbsp butter
2 cps sliced carrots
3 oranges, peeled and sliced thick
1 cp beef stock
4 tbsp orange juice or sherry
1 - Pound cutlets until thin.
2 - Combine cheese, pepper and sugar.
3 - Sprinkle over veal.
4 - Melt butter in skillet and brown veal on both sides.
5 - Transfer to buttered shallow casserole.
6 - Put carrots and orange slices over veal.
7 - Pour in beef stock, cover and bake at 325 degrees F. about 45 minutes.
8 - Now add orange juice and bake 20 minutes more until veal is tender.
9 - Veal and oranges are a remarkably good combination with cooked cauliflower.
