Kibbi, a Baked Lamb Casserole
2 lbs boned lamb
1/2 cp finely chopped onion
1 tsp salt
1/4 tsp pepper
1 cp cracked wheat
1/4 cp shelled pine nuts
1/4 cp butter
1 - Have lamb ground at the store.
2 - Combine with onion, salt, and pepper.
3 - Soak wheat in cold water for 15 minutes.
4 - Drain and squeeze dry.
5 - Put ground lamb and wheat through the meat grinder together, or chop very well.
6 - Sprinkle the mixture with enough ice water to make it moist and soft.
7 - Spread mixture into well greased shallow casserole with a shatp knife, cut it into diamonds or squares.
8 - Sprinkle with pine nuts, dot with butter, and bake (at 375 degrees F.) until golden.
9 - Run knife around each diamond or square, lift out and serve hot.
