Syrian Lamb Pilau
3 cps cooked diced lamb
3 cps cooked rice
3 small tomatoes, finely chopped
1 1/2 tbsp chopped onions
salt and pepper to taste
1 1/2 cps lamb stock or other meat stock
1/2 cp buttered bread crumbs
1 - In a generously greased medium casserole, arrange alternate layers of lamb, rice, and tomatoes.
2 - Season each layer with chopped onion, salt, and pepper.
3 - Repeat layers until all ingredients are used.
4 - Pour in stock.
5 - Top with buttered crumbs.
6 - Bake uncovered until brown and bubbly.
7 - This is a simple recipe for a well flavored Near East specialty.
