2 cps sifted all purpose flour
3 tsp baking powder
1 tsp salt
6 tbsp shortening
2/3 cp milk
dash of onion juice
3 tbsp olive oil
1 lb lamb, finely ground
1 1/2 cps chopped onions
1 1/2 cps tomato pulp or finely chopped tomatoes
2 tbsp chopped parsley
1 tsp salt
1/4 tsp pepper
1 - Make biscuit dough; sift together flour, baking powder, salt.
2 - Cut in shortening.
3 - Quickly stir in milk and onion juice.
4 - Roll out dough 12- to 3/4-inch thick on floured board.
5 - Cut into 10 circles, each about 5 inches in diameter, using a large biscuit cutter or saucer.
6 - Arrange biscuits on baking sheet, not quite touching each other.
7 - Heat olive oil, brown lmb and onions.
8 - Spoon out from saucepan, leaving as much oil as possible.
9 - Add tomato pulp, parsley, salt and pepper to pan.
10 - Bring to quick boil.
11 - Combine half of this sauce sith all of the lamb and onions. 12 - Divide lamb-tomato mixture over biscuits, piling high in the center. 13 - Do not spread out to edges or mixture will run over biscuits. 14 - Bake until lamb and biscuits are done. 15 - Heat remaining tomato sauce. 16 - Pour hot sauce over biscuits and meat. 17 - Allow 2 biscuits as main course, 1 otherwise.
