Lamb Chops in Grape Jelly
6 lamb chops
1/4 cp flour
2 tbsp fat
1 tsp salt
1/4 tsp pepper
1/4 tsp celery salt
3 small onions, quartered
1 carrot, cut into 1 inch slices
3/4 cp grape jelly
3/4 cp beef stock or water
1 bay leaf
4 fresh sprigs parsley
1 whole clove
5 whole peppercorns
1 - Trim fat off lamb chops.
2 - Wipe meat.
3 - Roll in flour.
4 - Brown on both sides in hot fat.
5 - Transfer browned chops to greased medium casserole.
6 - Season them with part of salt and pepper and celery salt.
7 - Surround chops with onions and carrot slices.
8 - Season again with salt, pepper and celery salt.
9 - Combine grape jelly, beef stock or water, bay leaf, parsley, clove and peppercorns.
10 - Pour into casserole.
11 - Cover and bake until lamb chops are tender and saucy.
12 - This is a wonderful way to serve lamb chops.
