Casserole of Lamb, Apples, and onions
2 lbs boneless lamb as for stew
1/2 cp flour seasoned with salt and pepper.
4 tart apples, pared, cored, and quartered
12 small white onions, partly cooked
1 cp lamb stock or water
2 tbsp butter
1 - Wipe lamb.
2 - Cut it into 1 inch cubes
3 - Shake a few pieces at a time in a paper bag with flour.
4 - Brown in a greased 1 1/2 quart casserole in a hot oven (450 degrees F. or on top of stove), then transfer to casserole).
5 - Turn pieces so they brown on all sides.
6 - Put apple quarters and whole onions around the lamb, pour in lamb stck or water, dot with butter, cover
casserole tightly, reduce oven heat to 325 degrees F. and bake for about 1 1/2 hours.
7 - Lamb will be very tender.
