Sweet Potato Pork Pie
1 1/2 lbs pork
1 bay leaf
2 tsp salt
1 cp sliced celery
1 tsp chopped parsley
1 cp chopped onions
2 tbsp fat or shortening
2 tbsp flour
1 cp pork stock
3 tart apples, pared and sliced thin
Sweet Potato Crust
1 cp sifted all purpose flour
3 tsp baking powder
1 1/2 tsp salt
3 tbsp shortening
1 cp mashed sweet potatoes
1/4 cp milk
1 - Cut pork into 2-inch pieces, pour on enough water to cover, add bay leaf, peppercorns, salt
celery and parsley and cook until pork is done.
2 - Strain.
3 - Boil liquid down to make 1 cp stock.
4 - Cook onions in fat until soft but not brown.
5 - Add flour, gradually stir in stock.
6 - Cook until smooth and thick.
7 - Arrange alternate layers of pork and apples in a greased large casserole.
8 - Make crust: Sift together flour, baking powder, and salt.
9 - Cut in shortening.
10 - Add sweet potatoes and milk to make soft dough.
11 - Knead for about a minute.
12 - Roll out 1/2-inch thick, cut out with small biscuit cutter on plate and arrange on pork.
13 - Bake until brown and steaming hot.
14 - A favorite Southern specialty.
