Pennsylvania Dutch Spareribs, Sauerkraut, and Dumplings
3 lbs spareribs
1 qt sauerkraut
2 cps all purpose flour
1 tsp baking powder
1 egg, slightly beaten
1 tsp salt
1/4 tsp pepper
1 - Put the spareribs, cut into serving pieces, into a shallow casserole.
2 - Spread sauerkraut on top, cover and bake for one an one half houra (at 350 degrees F.)
3 - Combine flour, baking powder, egg, salt, and pepper.
4 - Drop onto sauerkraut, cover pan and continue baking for 30 minutes longer.
5 - This will serve 4 in the Pennsylvania Dutch tradition of plenty, but might be stretched to 6 for less hearty appetites.
