Upside-Down Ham and Pineapple Loaf
1/4 cp butter
1/4 cp brown sugar
6 slices canned drained pineapple
1/2 cp maraschino cherries, drained
1 1/2 lbs ground raw ham
1 1/2 cps soft breadcrumbs
2 eggs, slightly beaten
1 - Melt butter in a shallow casserole which is flameproof.
2 - Stir in sugar.
3 - Arrange pineapple slices and maraschio cherries close together in a pretty pattern on the sugar.
4 - Mix ham, crumbs and eggs.
5 - Press mixture onto fruit.
6 - Bake until top browns.
7 - Pour off fat as it accumulates.
8 - To serve, invert on a heated platter so fruit side is up.
9 - Press back any pieces which may fall off when you turn the loaf.
