Spareribs and Sauerkraut Maui
2 lbs spareribs, cut into serving pieces
1/4 cp chopped green pepper
1/4 cp chopped onion
1/4 cp thin celery slices
2 tbsp bcon fat
1 tbsp cornstarch
1 No. 2 can pineapple tidbits in sirup
1/4 cp vinegar
1 tbsp soy sauce
1 qt sauerkraut
1 - Cook spareribs in boiling salted water. Let simmer for 1 hour.
2 - While ribs cook, saute green pepper, onion and celery in hot bacon fat until soft but not brown,.
3 - Stir in cornstqarch.
4 - Now add pineapple tidbits and sirup.
5 - Cook until thick and clear.
6 - Add vinegar and soy sasuce.
7 - An hour before serving: Arrange a layer of sauerkraut in a casserole greased with bacon fat.
8 - Add drained spareribs.
9 - Pour sauce over all.
10 - Put in oven at 350 degrees F., cover and bake until spareribs are deep brown.
