Pork Tenderloin with Prunes
4-6 lb pork tenderloin
3/4 cp cooked pitted prunes
2 tsp salt
1/4 tsp pepper
1 tsp ginger
1/4 cp prune juice
1/4 cp hot water
1 - Preheat oven (450 degrees F.) for about 15 minutes.
2 - Wipe pork and rub with lemon.
3 - Cut a pocket on long side of meat and stuff it with prunes.
4 - Tie with string.
5 - Put it into a casserole which is just about the same size as the roast.
6 - Brown roast on all sides in hot oven.
7 - Sprikle it with salt, pepper, and ginger.
8 - Reduce heat to 3450 degrees F., pour in prune juice and water, cover casserole and continue baking until pork is tender.
9 - The fklavor is grand!
