Gina's Chicken Cacciatore
1 cut up broiling chicken, about 3 lbs
2 cloves garlic, minced or pressed
1/4 cp olive oil
1 tsp paprika
1/2 cp finely chopped onion
3 cps canned tomatoes
1 tsp salt
1/4 tsp pepper
1/4 tsp dried rosemary
1/2 cp dry white wine
1/4 cp brandy
1 - Brown chicken and garlic in heavy saucepan in hot olive oil.
2 - Sprinkle chicken with paprika as it browns to enhance color.
3 - Discard garlic.
4 - Transfer browned chicken to medium casserole.
5 - Add onion, tomatoes, salt, pepper, rosemary, wine and brandy to saucepan.
6 - Bring to boil.
7 - Pour over chicken.
8 - Cover casserole and bake (at 325 degrees F.) until chicken is tender and sauce thick..
9 - Easy to reheat this recipe, so make double the quantity and freeze half.
10 - Such compliments as this will get.
