Chicken Tamale Casserole
1 tbsp olive oil
1 onion, minced
1 clove garlic, minced
2 cps chicken stock or consomme
1 tsp salt
1/4 cp tomato paste
1 1/2 cps canned tomatoes
1/2 cp chopped black olives
1/2 cp yellow corn meal
1 1/2 tsp chili powder
2 cps cooked chicken, cut into bite-size pieces
1 - Heat oil, add onion and garlic and cook until soft and yellow.
2 - Stir in chicken stock, salt, tomato paste, canned tomtoes, olives, corn meal and chili powder.
3 - Cook slowly about 15 minutes until thickened.
4 - Combine with chicken, then spoon into casserole.
5 - Bake uncovered until oozing and nicely browned.(If mixture is too thick to spoon, thin with hot chicken stock or water).
