Curried Rice Casserole
4 cps cooked rice (1 generous cup shen uncooked)
2 cps chicken stock or bouillon cubes dissolved in hot water
1/2 cp chopped tomatoes
1 tsp salt
1/2 small chopped onion
2 tbsp melted butter
1 tsp curry powder
1 - Combine rice with chicken stock or bouillon cubes dissolved in hot water.
2 - Add chopped tomatoes, salt, chopped onion, melted butter and curry powder.
3 - Bake in greased casserole at 350 degrees F. for 30 minutes.
4 - Do not bake longer or it will get too dry.
