Chicken Paprikas with Rice
1 cut-up roasting chicken, 4-5 lbs
1/4 cp seasoned flour (salt and pepper added to flour)
3 tbsp fat or lard
1 cp chopped onions
Boiling water (about 1 quart)
1 cp uncooked rice
1 tsp salt
1/2 tsp paprika
1 tsp commercial sour cream
1 - Shake chicken, 2 or 3 pieces at a time, in a paper bag with flour.
2 - Melt fat in large skillet and cook onions lightly but do not brown them.
3 - Push onions to one side and now brown chicken, turning once.
4 - Pour in boiling water to cover.
5 - Add rice, salt and paprika (more of this if you wish) cover and cook half an hour.
6 - Turn into greased 2 1/2-qt casserole and bake until chicken is fork tender.
7 - Remove cover for last 15 minutes so most of gravy is absorbed and top is lightly browned.
8 - Stir in sour cream and serve very hot.
