Manhattan Chicken Barbecue
2 quartered broiling chickens, each 3 lbs
1 cp water
2 tsp slt
1 tsp pepper
2 tbsp paprika
2 tbsp sugar
<1 cp chopped onionsbr> 2 cps tomato puree
1/2 cp oil or fat
1/2 cp lemon juice or vinegar
1 1/2 tbsp Worcestershire sauce
1 - Arrange washed chicken pieces in large shallow casserole.
2 - In a saucepan, combine water, salt, pepper, paprika, sugar, onions, tomato puree, and oil.
3 - Bring to boil, then remove from heat.
4 - Stir in lemon juice or vinegar, and Worcestershire sauce.
5 - Pour half sauce over the chicken.
6 - Cover casserole and bake 3/4 hour.
7 - Uncover casserole, add the remaining sauce and bake uncovered 20 minutes longer or until chicken is fork tender snf juicy.
