Carolina Jumbalaya (Jambalaya)
3 slices bacon
1 cp finely chopped onion
1 cp finely chopped green pepper
2 cloves garlic, finely chopped
1 1/2 cps diced cooked chicken
1 1/2 cps diced cooked ham
2 cps tiomatoes, cooked or canned
1 cp uncooked rice
2 1/2 cps chicken stock
1/2 tsp thyme
1 bay leaf
dash cayenne pepper
1 tsp salt
1 - Preheat oven to 350 degrees F..
2 - Fry bacon in skillet.
3 - Add onion, green pepper and garlic.
4 - Cook slowly until tender, turning often so onions do not burn.
5 - Add chicken and ham and saute 10 minutes longer.
6 - Put in other ingredients.
7 - Taste.
8 - Season with more cayenne (or chili powder) if you want a hotter taste.
9 - Turn into a greased large casserole.
10 - Bake in preheated oven until rice is tender and most of liquid is absorbed.
