Honolulu Chicken Livers and Rice
1 cp raw rice
3 cps boiling chicken stock or water
1/2 cp canned mushrooms (or fresh ones sauteed in butter)
1 lb chicken livers
1/2 tsp salt
1/4 tsp pepper
1/4 cp molasses
1 - Cook rice in boiling chicken stock or water for 20 minutes.
2 - Stir in mushrooms.
3 - Spread half of mixture into a buttered small casserole.
4 - Wipe livers.
5 - Cut in half.
6 - Season them with salt and pepper and dip into molasses.
7 - Transfer to casserole on top of rice.
8 - Add remaining rice and mushrooms, cover casserole and bake at 350 degrees F. until livers are tender, rice is fluffy
and sauce is thick and delicious.
