Yeast Ferment (for Bread)
The fermentation period for bread made with dry yeast may be
shortened if the following yeast ferment is first prepared: Ingredients
1 medium sized potato
4 cps water
1 tsp salt
1 cake dry yeast
1 tbsp sugar
1 - Crumble yeast and soften in 1/2 cp water.
2 - Wash, pare, and boil potato in 3 1/2 cps water
3 - Drain potato.
4 - Save potato water.
5 - Mash potato and add sugar and salt.
6 - Cool to lukewarm.
7 - Add yeast and potato water.
8 - If necessary add water to make 1 qt of the mixture.
9 - Cover and set in a warm place overnight.
10 - Use for making bread or rolls.
11 - Any unused pottion may be stored in the refrigerator and kept for several days.
