Bread (Master Recipe)
1 cake compressed yeast or 1/2 cake dry yeast
1 tbsp sugar
1 1/2 tsp salt
1 tbsp melted shortening
1 1/2 cps lukewarm water
5 - 5 1/4 cps flour
1 - Soften yeast in water.
2 - Add sugar, salt and shortening.
3 - Add flour gradually, beating thoroughly after each addition until
the dough is stiff enough to knead.
4 - Turn onto a lightly floured board.
5 - Knead until dough is smooth and elastic.
6 - Cover with a warm damp cloth.
7 - Set in a warm place and allow to double in bulk.
8 - (If dry yeast is used allow dough to rise overnight in a warm place.)
9 - Work down, cover with a warm damp cloth, and allow the dough to again double in bulk
10 - Work down lightly.
11 - Form into loaves.
12 - Place in well oiled pans.
13 - Again cover with a warm damp cloth.
14 - Set in a warm place, cover, and let rise until doubled in bulk.
15 - Bake in hot oven (450 degrees F.) for 15 minutes.
16 - Reduce the heat slightly and continue baking (410 - 425 degrees F.) for
the remainder of the time.
Total baking time 40-45 minutes.
From 4 - 4 1/2 hours are required for the entire process.
2 medium sized loaves.
