Salt Rising Bread
3 medium size potatoes
1 tsp sugar
4 cps boiling water
3 tbsp corn meal
1 tsp salt
2 cps lukewarm milk
1/8 tsp baking soda
1 cp water
2 tbsp melted shortening
1/8 tsp salt
1 - Pare and slice potatoes.
2 - Add corn meal, sugar, 1 tsp salt and boiling water.
3 - Wrap bowl in a heavy cloth.
4 - Cover and let stand in a warm place overnight.
5 - In the morning remove the potatoes.
6 - Add milk, water, baking soda, salt and shortening.
7 - Add sufficient flour to make a dough stiff enough to knead.
8 - Knead until smooth and elastic.
9 - Form into loaves.
10 - Place in well oiled pans.
11 - Cover and let rise until double in bulk.
12 - Bake in moderate oven (400 degrees F.) about 45 minutes.
