Roast Chicken III
Dress chicken. Wash carefully inside and outside. Wipe dry. Season
inside with salt and pepper. Prepare stuffing. Fill chicken with stuffing,
packing lightly. Sew up opening. Truss. Rub with unsalted fat. Place
on roaster. Do not cover. Cook in moderate oven (300 - 350 degrees F.),
until tender. Do not baste. Allow about 25 minutes per pound. If desired
cover breast of chicken with thin strips of salt pork before it is seared.
