1 cp cooked diced chicken
1/2 cp milk, scalded
2 tbsp melted butter
1/4 cp grated cheese
3 tbsp flour
salt, pepper, cayenne
1 - Combine flour and butter.
2 - Add milk slowly, stirring constantly
3 - Cook over hot water until thick and smooth.
4 - Add cheese, slightly beaten egg yolks and chicken
5 - Stir until well blended.
6 - Season to taste with salt, pepper and cayenne.
7 - Carefully fold in stiffly beaten egg whites.
8 - Pour into well oiled casserole.
9 - Sprinkle with paprika.
10 -Set in pan of warm water.
11 - Bake in moderate oven (375 degrees F.) until an inserted knife comes out clean.
