Caramelized Onion and Vinegar Veggie Dip
1 large onion, sliced thin and rings separated
2 tbsp olive oil
1/4 tsp salt
1 tbsp cider vinegar
2 stalks celery
1 - Preheat skillet to medium
2 - Add olive oil, then onions and salt.
3 - Cover and cook 5 minutes, then remove cover.
4 - Cook another 15 minutes uncovered, stirring often until onions are starting to brown.
5 - Chop the celery in a food processor.
6 - Spoon the caramelized onions over the chopped celery and serve.
