Potato Butter Horn Rolls
2 cps hot mashed potatoes
1 tbsp salt
2 cps milk
2 tbsp sugar
4 tbsp melted shortening
1 cake compressed yeast
6 cps flour
2 eggs, well beaten
1 - Add sugar, salt, and shortening to freshly prepared hpt mashed potatoes.
2 - Cool and add eggs.
3 - Soften yeast in mulk and add the potato mixture.
4 - Add flour, a little at a time, beating well after each addition.
5 - Turn onto lightly floured board.
6 - Knead until smooth and elastic. (The dough should be as soft as it is possible to handle)
7 - Cover with a damp cloth, set in a warm place and allow to double in bulk.
8 - Tutn onto lightly floured board.
9 - Roll in round sheet 1/2 inch thick.
10 - Cut into sections as you would cut a pie, leaving each section about 3 inches wide at the outer edge.
11 - Begin at the outside and roll each section toward the center.
12 - Form into crescents.
13 - Place on well oiled baking sheet.
14 - Cover with a warm, damp cloth.
15 - Let rise until treble in bulk.
16 - Bake in a hot oven (450 degrees F.) 12 to 15 minutes.
