Buckwheat Griddle Cakes II
4 cps lukewarm water
1/2 cake dry yeast or 1/2 cake compressed yeast
1 tbsp brown sugar or molasses
1 1/2 tsp salt
1/4 tsp baking soda
1 - Soften yeast in 1 cp water.
2 - Add sugar, salt, 3 cps water, and sufficient buckwheat flour to make a thin batter.
3 - Cover an let rise overnight in a warm place.
4 - In the morning add baking soda which has been dissolved in 1 tbsp cold water.
5 - Beat thoroughly.
6 - Bake on hot griddle.
1/2 cp of the batter may be saved and used to start a second quantity of batter.
