1 medium cauliflower
1 cp tomato juice
2 tbsp flour
1/2 cp grated cheese
1 tbsp lemon juice
buttered bread crumbs
1 - Remove leaves and stalk from cauliflower, Separate flowerets.
2 - Place upside down in water to which 1 tbsp salt has been added per quart.
3 - Let stand 30 minutes.
4 - Drain.
5 - Rinse in cold water.
6 - Cover with boiling water.
7 - Boil until cauloflower is tender.
8 - Drain.
9 - Place in well-oiled baking dish.
10 - Mix flour to a smooth paste with a small amount of tomato juice.
11 - Add remaining juice.
12 - Season to taste.
13 - Cook over hot water until thick.
14 - Add cheese and lemon juice.
15 - Pour over cauliflower.
16 - Cover with buttered crumbs.
17 - Brown in moderate oven (400 degrees F.).
If desired, the cooked cauliflower may be served as a buttered or creamed vegetable.
