Sweet Potato Fritters
2 cps mashed sweet potatoes
1/2 cp flour
1/2 tsp salt
1 tsp baking powder
4 tsp melted butter or butter substitute
1 cp milk
1 tbsp sugar
1 - Combine butter or butter substitute, potatoes, sugar, milk, and egg yolks.
2 - Beat until smooth.
3 - Sift flour, measure, and sift with baking powder and salt.
4 - Add to first mixture.
5 - Fold in stiffly beaten egg whites.
6 - Drop by teaspoonfuls into deep fat (365 degrees F.)
7 - Fry until brown.
8 - Drain on crumpled absorbent paper
9 - Sprinkle with powdered sugar.
