Baked Tomatoes II
1/2 cp cooked rice
1 tbsp butter
1/2 cp chopped meat
1/2 cp meat broth
salt and pepper
1 - Wash tomatoes
2 - Cut slice from top of each.
3 - Hollow out tomato leaving thick shell.
4 - Combine reic, meat and broth.
5 - Season to taste
6 - Fill tomatoes with rice mixture.
7 - Place in well-oiled casserole.
8 - Place a bit of butter on each tomato.
9 - Bake in moderate oven (375 degrees F.) until tomatoes are tender.
10 - If desired, buttered bread crumbs or chopped green pepper may be substituted for the rice.
11 - Well-seasoned lima beans or shredded fish may be used as a filling.
