6 medium turnips
2 tbsp butter
1/2 cp molk
1/2 cp grated cheese
2 eggs, well beaten
salt, pepper, cayenne
1 - Boil turnips in salt water until tender.
2 - Drain.
3 - Mash.
4 - Add butter, milk, cheese, and well beaten egg yolks.
5 - Season to taste.
6 - Fold in stiffly beaten egg whites.
7 - Pile lightly into a well-oiled baking dish.
8 - Set in a pan of warm water.
9 - Bake in moderate oven (375 degrees F.) until an inserted knife comes out clean.
