Creole String Beans
1 qt green beans
salt and pepper
3 slices bacon
1 - Wash beans.
2 - Remove strings.
3 - Fry bacon until crisp and brown.
4 - Add beans and sufficient boiling water to prevent burning.
5 - Cover.
6 - Cook slowly, stirring occasionally until tender.
7 - Season to taste.
8 - Pare potatoes.
9 - Place onn top of beans.
10 - Steam until potatoes are tender.
11 - If desired, a few slices of onion may be added.
12 - One-fourth pound diced ham may be substituted for the bacon.
