Pare and slice cucumbers lengthwise in thin slices. Soak in slightly
salted cold water about 1 hour. Drau=in. Dry on folded towel. Roll slices
in fine bread crumbs. Dip in seasoned slightly beaten egg. Roll in
bread crumbs. Fry in deep fat (365 degrees F.) until well browned. Drain
on crumpled absorbent paper. Garnish with parsley or pimientos.
