Peppers with Buttered Rice
1 cp rice
2 green peppers, chopped
1 1/2 cps cold water
2 tbsp butter or butter substitute
3/4 tsp salt
1 - Wash rice. Place in shallow kettle.
2 - Add water and salt.
3 - Cover closely.
4 - Heat to boiling.
5 - Boil slowly until rice is tender.
6 - Let stand in covered container on back of stove or over low heat 15 minutes.
7 - Add chopped peppers to melted butter.
8 - Pour over hot rice.
9 - Mix byn tossing lightly with 2 forks.
10 - Garnish with parsley.
