1 1/2 cps canned asparagus
1 tsp salt
4 tbsp flour
2 tbsp water
1/2 cp cracker crumbs
1 cp milk, scalded
3 tbsp butter or butter substitute
3 hard-cooked eggs, chopped
1 egg, slightly beaten
1 - Combine milk, flour, butter or butter substitute, and salt.
2 - Cook over hot water until thick and smooth.
3 - Add asparagus and chopped eggs.
4 - Mix quickly and lightly.
5 - Chill thoroughly.
6 - Form in balls or rolls.
7 - Roll lightly in cracker crumbs.
8 - Dip in egg which has been diluted with water.
9 - Roll in cracker crumbs.
10 - Fry in deep fat (390 degrees F.) until browned.
11 - Drain on crumpled absorbent paper.
