Red Tapioca Pudding
1/2 cp quick cooking tapioca
4 cps water and cherry juiced
1 1/4 cps sugar
1/4 cp red cinnamon candies
2 1/2 cps canned red cherries
1/2 tsp salt
2 tbsp lemon juice
3 tbsp butter or butter alternate
2 apples, thinly sliced
1 - Combine tapioca, water and cherry juice, salt, sugar, butter or butter alternate, and cinnamon candies.
2 - Cook over hot water until tapioca is clear.
3 - Add lemon juice and cherries.
4 - Mix thoroughly.
5 - Fill a well oiled baking dish with alternate layers of tapioca mixture and apples.
6 - Cover.
7 - Bke in moderate oven (375 degrees F.) 45 minutes.
9 - Serve with cream if desired.
