12 medium peppers
1 bottle fruit pectin
6 1/2 cps sugar
1 1/2 cps vinegar
1 - Green and red sweet peppers may be used in any proportion.
2 - Discard seeds.
3 - Put peppers through food chopper twice, using the finest knife.
4 - Measure peppers.
5 - Use enough juice from peppers to make cups level.
6 - Add sugar and vinegar.
7 - Mix thoroughly.
8 - Heat rapidly to a full rolling boil.
9 - Stir constantly before and while boiling.
10 - Boil hard 2 minutes.
11 - Remove from fire and stir in fruit pectin.
12 - Stir and skim alternately for just 8 m inutes to cool slightly to prevent floating.
