Rice Cheese Souffle'
1 cp cooked rice
2 tbsp flour
1/2 cp grated cheese
2 tbsp melted butter
1/2 cp milk, scalded
salt and cayenne
1 - Combine butter, four, and milk.
2 - Cook over hot wter until smooth and thick.
3 - Add well-beaten egg yolks and rice.
4 - Cook 5 minutes.
5 - Remove from fire.
6 - Add cheese.
7 - Mix until cheese is melted.
8 - Season with salt and cayenne.
9 - Cool.
10 - Fold in stiffly beaten egg whites.
11 - Pour into well-oiled casserole
12 - Set in pan of warm water.
13 - Bake in moderate oven (375 degrees F.) or until inserted knife comes out clean.
